Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large mixing bowl, combine zucchini, almond flour, eggs, baking powder, garlic powder, onion powder, salt, and pepper.
  4. Divide the dough into 4 to 6 portions, shape them into bagels.
  5. Sprinkle with cheese or seeds if desired, then place on the baking tray.
  6. Bake for 25 to 30 minutes until golden brown.
  7. Remove from oven and cool briefly on a wire rack before serving.
