For the Salad
  • 1 head Hearts of Romaine or any leafy green like kale or spinach
  • 1 cup Radicchio or red cabbage
  • 0.5-1 cup Chickpeas drained and rinsed
  • 1 handful Cherry Tomatoes or diced regular tomatoes
  • 0.5 large Cucumber diced; substitute zucchini or celery
  • 0.33 cup Red Onion minced; or shallots or green onions
  • 1 handful Olives pitted and sliced
  • 1 piece Pepperoncini or any pepper
  • to taste Cracked Black Pepper
  • optional Vegan Parmesan or nutritional yeast
For the Dressing
  • 2 tbsp Tahini or Cashew Butter or sunflower seed butter
  • 2 tsp Lemon Juice freshly squeezed
  • 0.5 tsp Maple Syrup or agave or stevia
  • 3 tbsp Red Wine Vinegar or any vinegar
  • 2 tsp Italian Seasoning or dried oregano or basil
  • 0.5-1 tsp Garlic Powder or fresh minced garlic
  • 0.5-1 tsp Onion Powder or fresh onion
  • as needed tbsp Water to achieve desired consistency
  • to taste Salt and Pepper use sea salt

Method
 

Step-by-Step Instructions
  1. Wash and dry fresh produce. Chop hearts of romaine and radicchio into bite-sized pieces and place in a large bowl.
  2. Rinse and drain chickpeas, then add to the bowl along with halved cherry tomatoes, diced cucumber, minced red onion, sliced olives, and pepperoncini.
  3. In a small mixing bowl, combine tahini or cashew butter, lemon juice, maple syrup, red wine vinegar, Italian seasoning, garlic powder, and onion powder. Whisk until smooth and creamy, adding water as needed.
  4. Taste the dressing and adjust seasonings with salt and pepper. Optionally add red pepper flakes for heat.
  5. Pour dressing over the chopped salad ingredients and toss gently until well-coated.
  6. Serve immediately or store components separately in airtight containers to keep fresh.
