Salad

  • 1 cup fresh mandarin orange slices Can substitute with tangerines.
  • 0.5 cup chopped celery leaves Can be omitted.
  • 0.5 cup Medjool dates, finely chopped Can substitute with dried figs or apricots.
  • 0.5 cup shelled pistachios, roughly chopped Can substitute with almonds or sunflower seeds.
  • 0.25 cup freshly chopped flat-leaf parsley Can substitute with cilantro.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine 3 tablespoons of extra virgin olive oil, the juice of one fresh lemon, ½ teaspoon of sea salt, and ¼ teaspoon of freshly ground black pepper. Whisk until well emulsified.
  2. Add in ½ cup of finely chopped Medjool dates to the dressing. Gently stir to ensure the dates are well coated.
  3. Fold in 4 cups of thinly sliced celery stalks, along with ½ cup of chopped celery leaves, into the bowl. Mix gently until thoroughly combined.
  4. Carefully add 1 cup of fresh mandarin orange slices and ½ cup of roughly chopped shelled pistachios. Stir gently.
  5. Taste the salad and adjust the seasoning as needed. Stir to ensure each bite is packed with flavor.
  6. Serve immediately for the best texture and flavor.
