Method
 

Preparation
  1. Wash and dry the mixed salad greens thoroughly using a salad spinner.
  2. Rinse the blueberries under cool running water and set aside to drain.
  3. Chop the shelled pistachios into small pieces; optionally toast in a skillet for 5 minutes.
  4. Crumble the feta cheese into small pieces and add to the salad bowl.
  5. Thinly slice the red onion and add to the salad; soak in cold water if desired.
  6. In a small bowl, whisk the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until emulsified.
  7. Drizzle the dressing over the salad just before serving and toss gently.
  8. Taste and adjust seasoning before serving, or chill for 10-15 minutes to meld flavors.
