- Wash and dry the mixed salad greens thoroughly using a salad spinner.
- Rinse the blueberries under cool running water and set aside to drain.
- Chop the shelled pistachios into small pieces; optionally toast in a skillet for 5 minutes.
- Crumble the feta cheese into small pieces and add to the salad bowl.
- Thinly slice the red onion and add to the salad; soak in cold water if desired.
- In a small bowl, whisk the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until emulsified.
- Drizzle the dressing over the salad just before serving and toss gently.
- Taste and adjust seasoning before serving, or chill for 10-15 minutes to meld flavors.
