  • 2 cups dairy-free milk unsweetened soy, almond, or oat milk
  • 1/3 cup brown sugar or coconut/granulated sugar
  • 3 tablespoons cornstarch or ground flax/chia seeds as a substitute
  • 1 teaspoon ground cinnamon or nutmeg/pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon black salt optional, or regular salt
For the Pecan Crumb Topping (optional)
  • 1/2 cup all-purpose or gluten-free flour
  • 1/2 cup chopped pecans or walnuts/seeds
  • 1/4 cup vegan butter or coconut oil
  • 1/4 cup light brown sugar or coconut/granulated sugar
  • 1 teaspoon ground cinnamon

Prep and Assemble
  1. Begin by selecting your stale loaf of bread and cutting it into 1-inch cubes or thick slices. Spread them in a greased casserole dish.
  2. In a mixing bowl, whisk together the dairy-free milk, brown sugar, cornstarch, ground cinnamon, vanilla extract, and black salt. Allow to sit for 5 minutes.
  3. Pour the custard mixture over the arranged bread, ensuring all pieces are coated.
  4. Let the casserole sit for at least 30 minutes, or refrigerate overnight for deeper flavor.
  5. In a separate bowl, mix flour, chopped pecans, vegan butter, light brown sugar, and ground cinnamon until crumbly.
  6. Preheat oven to 350°F (180°C). Uncover the casserole and sprinkle crumble topping over it. Bake for 30 to 40 minutes until golden brown.
