Ingredients

  • 1 cup quinoa can substitute with brown rice or farro
  • 1 can chickpeas drained and rinsed
For the Veggies
  • 1 broccoli florets steamed or roasted
  • 1 sweet potato diced, can substitute with butternut squash
  • 1 shredded carrots raw or lightly steamed
  • 1 red cabbage or bell peppers
  • 1 avocado ripe for best taste
For the Dressing
  • ¼ cup tahini can substitute with sunflower seed butter
  • 1 tablespoon lemon juice can use lime juice for a twist
  • 1 tablespoon maple syrup can use agave syrup instead
  • 1 clove garlic minced, optional for milder dressing
  • salt and pepper to taste

Method
 

Cooking Steps
  1. Rinse quinoa thoroughly under cold water, combine with water, bring to a boil, reduce to simmer, cover and cook for 15 minutes. Rest for 5 minutes.
  2. Drain and rinse chickpeas, dry on a kitchen towel.
  3. Steam broccoli florets for 5-7 minutes until tender.
  4. Preheat oven to 400°F. Roast diced sweet potato with olive oil, salt, and pepper for 20-25 minutes.
  5. Whisk together tahini, lemon juice, maple syrup, and garlic in a mixing bowl, adjust water until pourable.
  6. Assemble bowl with quinoa, chickpeas, vegetables, and avocado.
  7. Drizzle dressing over the assembled bowl and serve immediately.
