Ingredients
  

Beef Layer
  • 1 lb Ground Beef Substitute with shredded chicken or plant-based meat for different flavor
  • 1 packet Taco Seasoning Homemade seasoning for extra personal touch
  • 1 cup Refried Beans Black beans or pinto beans can be used as alternatives
  • 1/4 cup Water Omit if using a well-blended refried bean product
Nacho Base
  • 10 oz Tortilla Chips Substitute with cassava chips or plantain chips for gluten-free option
  • 2 cups Shredded Cheese Cheddar and Monterey Jack recommended; use dairy-free cheese for vegan
Fresh Toppings
  • 1/4 cup Pickled Jalapeños Substitute with fresh jalapeños or omit for milder flavor
  • 1 cup Roma Tomatoes, Diced Cherry tomatoes can be an alternative
  • 1/2 cup Red Onion, Diced Green onions can be used as milder substitute
  • 1 medium Avocado, Diced Substitute with guacamole for convenience
  • 1/2 cup Sour Cream Use Greek yogurt for similar texture and flavor or omit for Whole30
  • 1/4 cup Fresh Cilantro, Roughly Chopped Omit for a low-herb flavor or use green onions

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef and brown it for about 5 minutes.
  3. Sprinkle in the taco seasoning, mixing thoroughly until the beef is evenly coated and aromatic, about another 5 minutes.
  4. Stir in the refried beans along with a splash of water. Mix well until everything is combined and warm, about 2-3 minutes.
  5. On a rimmed baking sheet, distribute a layer of tortilla chips. Spoon the beef and bean mixture on top.
  6. Sprinkle shredded cheese and sliced pickled jalapeños over the nachos.
  7. Bake in the preheated oven for 10-15 minutes until the cheese melts and edges of the chips turn golden brown.
  8. Remove from oven, add diced tomatoes, red onion, avocado, sour cream, and chopped cilantro on top, then serve.

Notes
