  1. Begin by heating a large skillet over medium heat. Add 4-5 strips of bacon, cooking for about 2-3 minutes on each side until crispy.
  2. On a cutting board, combine 8 ounces of cream cheese, chopped bacon, 1 cup of cheddar, 3 tablespoons of chives, and diced jalapeño. Mix until well blended.
  3. Take two slices of sourdough bread and spread the creamy filling over one slice. Place the second slice on top and press down gently.
