Step-by-Step Instructions
  1. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Once shimmering, add the chopped chili and sauté for 1-2 minutes until fragrant.
  2. Pour in the coconut milk, stirring to combine, and allow the mixture to gently simmer for about 5 minutes.
  3. While the coconut sauce simmers, sprinkle salt and pepper generously on both sides of the fresh grouper fillets. Let them rest for 5 minutes.
  4. In another skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Lay the seasoned grouper fillets in the skillet, cooking for 3-4 minutes on each side.
  5. Once cooked, transfer the fillets to serving plates and spoon the spicy coconut sauce over them. Serve immediately.
