For the Sauce
  • ½ cup peanut butter creamy or crunchy
  • ¼ cup soy sauce low-sodium if desired
  • 2 tablespoons honey
  • 1 tablespoon lime juice fresh
  • 1 teaspoon minced garlic
  • 1 teaspoon red pepper flakes optional

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, lime juice, minced garlic, and red pepper flakes until smooth.
  2. In a large mixing bowl, combine shredded chicken with half of the peanut sauce, folding until evenly coated.
  3. Lay out lettuce leaves on a plate and distribute the chicken mixture evenly.
  4. Top each lettuce leaf with shredded carrots and sliced bell peppers.
  5. Drizzle remaining peanut sauce over the filled lettuce leaves.
  6. Gently fold in the sides of each lettuce leaf and roll tightly from the bottom up.
  7. Serve immediately for best flavor, optionally garnished with chopped peanuts.
