Step-by-Step Instructions
  1. Prepare the Marinade: In a large bowl, whisk together hoisin sauce, soy sauce, oyster sauce, Shaoxing wine, honey, brown sugar, ketchup, five-spice powder, sesame oil, minced garlic, ginger, and optional red food coloring. Ensure all ingredients are well combined.
  2. Marinate the Chicken: Place chicken thighs or breasts in a resealable plastic bag or shallow dish, pour the marinade over the meat, and massage it in. Seal or cover, then refrigerate for at least 4 hours, or overnight.
  3. Prepare for Cooking: Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top for even cooking.
  4. Roast the Chicken: Remove chicken from the marinade and place it on the wire rack. Roast for 25-30 minutes, flipping halfway through for an even golden-brown color.
  5. Baste the Chicken: In the last 5 minutes, mix honey with warm water, baste the chicken, then broil for 2-3 minutes until bubbling and slightly charred.
