Preparation Steps
- Preheat your oven to 350°F (175°C).
- Chop sweet potatoes, onion, green pepper, and garlic into small, uniform pieces.
- Grease a 9x13-inch casserole dish with oil or cooking spray.
- In a Dutch oven, heat avocado oil over medium heat and sauté onion, green pepper, and sweet potatoes for 8-9 minutes.
- Add garlic in the last 2 minutes of sautéing.
- Spread the cooked vegetable mixture evenly into the greased casserole dish.
- Cook the turkey sausage in the same Dutch oven until browned and fully cooked.
- Combine the sausage with the sautéed vegetables in the casserole dish.
- In a large bowl, whisk together eggs, milk, thyme, salt, pepper, and half of the cheese.
- Pour the egg mixture evenly over the sausage and vegetable blend.
- Bake the casserole in the preheated oven for 40-45 minutes.
- Let the casserole cool for about 15 minutes before serving.
