Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Chop sweet potatoes, onion, green pepper, and garlic into small, uniform pieces.
  3. Grease a 9x13-inch casserole dish with oil or cooking spray.
  4. In a Dutch oven, heat avocado oil over medium heat and sauté onion, green pepper, and sweet potatoes for 8-9 minutes.
  5. Add garlic in the last 2 minutes of sautéing.
  6. Spread the cooked vegetable mixture evenly into the greased casserole dish.
  7. Cook the turkey sausage in the same Dutch oven until browned and fully cooked.
  8. Combine the sausage with the sautéed vegetables in the casserole dish.
  9. In a large bowl, whisk together eggs, milk, thyme, salt, pepper, and half of the cheese.
  10. Pour the egg mixture evenly over the sausage and vegetable blend.
  11. Bake the casserole in the preheated oven for 40-45 minutes.
  12. Let the casserole cool for about 15 minutes before serving.
