- In a small bowl, combine 1/3 cup of sweet chili sauce and 2 teaspoons of sambal. Stir until well-blended and smooth.
- If using wooden skewers, soak them in water for 30 minutes. Begin threading the shrimp and pineapple onto the skewers, alternating until all ingredients are used.
- Brush both sides of each skewer with the sauce.
- Preheat your grill to medium-high heat, around 400°F (200°C), for about 10-15 minutes.
- Place the skewers on the grill and cook for 3 minutes until the shrimp turn opaque. Brush remaining sauce, flip, and grill for an additional 2-3 minutes.
- Remove skewers, let rest for a minute, and garnish with parsley and lime wedges before serving.
