  • 1 lb large uncooked shrimp can substitute with any large raw shrimp variety
  • 1 cup fresh pineapple chunks precut or whole pineapple works well
For the Sauce
  • 1/3 cup sweet chili sauce adds irresistible sweetness
  • 2 tsp sambal can be swapped for sriracha, gochujang, or red chili flakes

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine 1/3 cup of sweet chili sauce and 2 teaspoons of sambal. Stir until well-blended and smooth.
  2. If using wooden skewers, soak them in water for 30 minutes. Begin threading the shrimp and pineapple onto the skewers, alternating until all ingredients are used.
  3. Brush both sides of each skewer with the sauce.
  4. Preheat your grill to medium-high heat, around 400°F (200°C), for about 10-15 minutes.
  5. Place the skewers on the grill and cook for 3 minutes until the shrimp turn opaque. Brush remaining sauce, flip, and grill for an additional 2-3 minutes.
  6. Remove skewers, let rest for a minute, and garnish with parsley and lime wedges before serving.
