Method
 

Step-by-Step Instructions for Pineapple Chicken
  1. In a medium bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar. Set aside.
  2. Chop the chicken breast into bite-sized pieces and season with garlic powder and pepper. Coat with cornstarch.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and sauté for about 7-8 minutes until golden brown.
  4. Remove chicken and add canned pineapple tidbits to the skillet. Cook for 1 minute without stirring.
  5. Add chopped red bell pepper and onion to the skillet. Stir-fry for about 3 minutes.
  6. Return chicken to skillet. Pour sauce over all and stir gently. Cook for 1-2 minutes until slightly thickened.
  7. Serve immediately over rice or noodles, garnished with sliced scallions if desired.
