For the Cones
  • 12 sheets Wonton Wrappers or rice paper for gluten-free option
For the Filling
  • 1 cup Cooked Shrimp chopped
  • 2 tablespoons Mayonnaise or vegan mayo
  • Sriracha to taste
  • 1 medium Avocado diced
  • 1 medium Cucumber sliced
For Dipping & Garnishing
  • 1 tablespoon Soy Sauce or gluten-free soy sauce
  • 1 tablespoon Sesame Seeds
  • 2 tablespoons Chopped Green Onions

Method
 

Step‑by‑Step Instructions
  1. Rinse sushi rice under cold water until clear. Combine with water in saucepan, boil, then simmer for 18-20 minutes. Let rest for 10 minutes.
  2. Mix rice vinegar, sugar, and salt in a bowl until dissolved. Gently fold into cooled sushi rice.
  3. Preheat oven to 375°F. Grease muffin tin and mold wonton wrappers into cones. Bake for 8-10 minutes until golden.
  4. Combine shrimp, mayonnaise, and sriracha in a bowl. Mix until coated.
  5. Assemble cones with sushi rice, filling, avocado, and cucumber.
  6. Garnish with sesame seeds and green onions. Serve with soy sauce.
