  • 1 box Vanilla Cake Mix Use boxed mix or homemade
  • 3/4 cup Strawberry Frosting Swap with cream cheese frosting for a twist
For the Coating
  • 1 cup Pink Candy Melts For vibrant outer layer
  • 1 teaspoon Coconut Oil Helps thin the candy melts

Method
 

Truffle Preparation
  1. Preheat oven to 350°F (175°C). Prepare vanilla cake mix as per instructions and bake in a greased 9x13 inch pan for 25-30 minutes, or until a toothpick comes out clean.
  2. Allow the cake to cool completely in the pan for about an hour.
  3. Crumble the cooled cake into fine crumbs resembling moist sand.
  4. Add 3/4 cup of strawberry frosting to the cake crumbs and mix until a moldable dough forms.
  5. Scoop 1-2 tablespoons of the mixture and roll into smooth balls, placing them on a lined baking sheet. Chill for 30 minutes.
  6. Melt pink candy melts with 1 teaspoon of coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between.
  7. Dip each truffle into the melted candy until completely coated and return to the lined baking sheet.
  8. Sprinkle crushed freeze-dried strawberries or decorative sprinkles on top before the coating sets.
  9. Allow coating to firm for at least 10 minutes before serving.
