Truffle Preparation
- Preheat oven to 350°F (175°C). Prepare vanilla cake mix as per instructions and bake in a greased 9x13 inch pan for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cake to cool completely in the pan for about an hour.
- Crumble the cooled cake into fine crumbs resembling moist sand.
- Add 3/4 cup of strawberry frosting to the cake crumbs and mix until a moldable dough forms.
- Scoop 1-2 tablespoons of the mixture and roll into smooth balls, placing them on a lined baking sheet. Chill for 30 minutes.
- Melt pink candy melts with 1 teaspoon of coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between.
- Dip each truffle into the melted candy until completely coated and return to the lined baking sheet.
- Sprinkle crushed freeze-dried strawberries or decorative sprinkles on top before the coating sets.
- Allow coating to firm for at least 10 minutes before serving.
