Step-by-Step Instructions

  2. Zest the lemon to obtain about a tablespoon of zest and chop the strawberries into 1/2-inch pieces.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. In a separate bowl, whisk together egg, cream, sour cream, lemon juice, and vanilla essence.
  6. Fold the wet mixture into the dry ingredients until just combined.
  7. Gently fold in the chopped strawberries.
  8. Turn the dough onto a floured surface and shape it into a circle 1-inch thick. Cut into 8 wedges.
  9. Brush the tops of the scones with additional cream.
  10. Bake for 15-16 minutes or until golden brown.
