Cooking Steps
  1. Heat a large pan over medium heat and add vegetable oil. Once shimmering, add pork belly pieces and sear for 5-7 minutes until browned.
  2. In the same pan, lower the heat and add minced garlic and sliced ginger. Sauté for 1-2 minutes until fragrant.
  3. Return the pork belly to the pan, pour in the light soy sauce, dark soy sauce, Shaoxing wine, and hoisin sauce, then sprinkle with brown sugar and add water.
  4. Bring the mixture to a gentle boil, then reduce to low. Cover and let it simmer uncovered for 1 to 1.5 hours, stirring occasionally.
  5. Taste the sauce and adjust seasoning. Optionally add a splash of rice vinegar. Stir and prepare for plating.
  6. Serve hot, garnished with sliced green onions and sesame seeds. Enjoy with steamed rice.
