  3. Once the yeast is proofed, add it to the flour, along with melted butter and beaten eggs. Mix until shaggy dough forms.
  4. Gradually mix the wet ingredients with the dry until the dough pulls away from the sides.
  5. Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour.
  7. Sauté spinach in a skillet until wilted, about 2-3 minutes. Combine spinach, eggs, and ham in a bowl.
  8. Roll out the dough and spoon the filling along one edge. Roll tightly and cut into pieces.
  9. Let the shaped rolls rise for 30-40 minutes, then preheat the oven.
  10. Bake rolls at 375°F for 20-25 minutes until golden brown.
  11. Cool on a wire rack for at least 10 minutes before serving.
