- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine ground beef, chopped onion, fresh cilantro, diced jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix gently until evenly combined.
- Fold in the shredded cheddar cheese and crushed tortilla chips to the beef mixture. Mix just until well incorporated.
- Crack an egg into the mixture and mix thoroughly until the egg is evenly distributed.
- Shape the mixture into golf-ball-sized portions, about 1.5 inches in diameter.
- Heat olive oil in a large ovenproof skillet over medium heat. Add the meatballs, searing them until golden brown, about 5 minutes.
