Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Generously grease a baking dish with cooking spray or a light coat of olive oil.
  3. In a large mixing bowl, combine the ground chicken, grated cheddar, minced jalapeño, Panko breadcrumbs, diced shallot, egg, Worcestershire sauce, salt, pepper, garlic powder, onion powder, smoked paprika, and fresh cilantro. Mix gently by hand until just combined.
  4. Transfer the mixture into the prepared baking dish, shaping it into a uniformly shaped loaf.
  5. In a separate bowl, whisk together the adobo sauce, honey, and apple cider vinegar until smooth. Drizzle the glaze evenly over the top of the meatloaf.
  6. Place the meatloaf in your preheated oven and bake for 25 minutes. Then, baste the meatloaf with the flavorful pan drippings.
  7. Continue baking for an additional 5-10 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove the meatloaf from the oven and allow it to rest for 5-10 minutes before slicing.
