  • 2 tablespoons Coarse Sea Salt Regular table salt works, but grain size is different.
  • 2 cups Water Filtered water is best for taste.
  • 1 cup White Vinegar Apple cider vinegar is a common substitute.
  • 1 medium White Onion Feel free to swap with red onion for a milder taste.
  • 4 cups Sliced Salad Cucumbers Kirby cucumbers are ideal for crunch.

Method
 

Brining and Pickling Process
  1. In a large saucepan, combine prepared horseradish, white sugar, minced garlic, coarse sea salt, filtered water, and white vinegar. Bring the mixture to a boil, stirring until sugar and salt dissolve, about 3-5 minutes.
  2. Reduce heat to low and add sliced cucumbers and white onion. Simmer for an additional 5 minutes, stirring occasionally.
  3. Remove from heat and let cool to room temperature. Transfer pickles and brine into sterilized, airtight jars.
  4. Seal jars tightly and refrigerate for at least 24 hours before serving.
