Brining and Pickling Process
- In a large saucepan, combine prepared horseradish, white sugar, minced garlic, coarse sea salt, filtered water, and white vinegar. Bring the mixture to a boil, stirring until sugar and salt dissolve, about 3-5 minutes.
- Reduce heat to low and add sliced cucumbers and white onion. Simmer for an additional 5 minutes, stirring occasionally.
- Remove from heat and let cool to room temperature. Transfer pickles and brine into sterilized, airtight jars.
- Seal jars tightly and refrigerate for at least 24 hours before serving.
