  2. Mix cornstarch, salt, and pepper in a bowl. Coat each chicken thigh in the mixture and let sit.
  3. Heat oil in a skillet over medium-high heat. Fry chicken thighs for 5-7 minutes on each side until golden brown.
  4. Remove chicken and reduce heat. Add butter to the skillet, scraping the pan to deglaze.
