Ingredients
  

For the Crust
  • 2 cups All-purpose flour Substitute with gluten-free blend if needed.
  • 1 cup Unsalted butter Cold and cut into cubes; use margarine or coconut oil for vegan.
  • 1 cup Ice water Add slowly to avoid overmixing.
For the Filling
  • 4 cups Fresh peaches Canned or frozen peaches can be used.
  • 3/4 cup Granulated sugar Brown sugar can be substituted.
  • 2 tablespoons Cornstarch Used for thickening.
  • 1 tablespoon Lemon juice Adds brightness.
  • 1 large Beaten egg For brushing; can use almond milk mixed with maple syrup for vegan.
Optional Spices
  • 1 teaspoon Cinnamon Adds warm flavor.
  • 1 teaspoon Vanilla extract Enhances flavor.

Method
 

Preparing the Tart
  1. Combine flour and a pinch of salt in a large mixing bowl. Cut in cold unsalted butter until resembling coarse crumbs. Gradually add ice water and mix until dough holds together. Shape into a disk, wrap, and chill for 30 minutes.
  2. Slice fresh peaches and toss with granulated sugar, cornstarch, lemon juice, and optional spices.
  3. Preheat oven to 400°F (200°C).
  4. Roll out chilled dough into a 12-inch circle on a floured surface. Transfer to a parchment-lined baking sheet.
  5. Spoon peach mixture into the center, fold edges over peaches, brush with beaten egg and sprinkle with coarse sugar.
  6. Bake for 35-40 minutes until crust is golden brown and peaches are tender.
  7. Cool for about 15 minutes before serving warm or at room temperature.
