Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 450°F (230°C).
  2. Melt 2 tablespoons of butter in a skillet over medium-low heat and caramelize onions for 30-40 minutes.
  3. Add another tablespoon of butter to the skillet, wilt the spinach for about 3 minutes, then stir in minced garlic.
  4. Butterfly the pork tenderloin by slicing it lengthwise, leaving one side intact. Season inside with salt and pepper.
  5. Spread cranberry sauce inside the pork, then layer in spinach mixture, caramelized onions, and goat cheese.
  6. Roll the pork tightly and secure with kitchen twine. Season outside with salt and pepper.
  7. Roast in the preheated oven for 30-35 minutes or until the internal temperature reaches 145°F (63°C).
  8. Let the pork rest for about 20 minutes, then slice and serve it with additional cranberry sauce or gravy.
