For the Chicken

For the Tzatziki
  • 1 cup Fat-Free Plain Greek Yogurt Base for the tzatziki.
  • 1/2 cup Cucumber (Grated) Squeeze to remove excess moisture.
  • 1 tablespoon Fresh Parsley Brightens up the sauce.

Method
 

Cooking Instructions
  1. Spray the slow cooker with non-stick spray and place the chicken breasts evenly inside.
  2. In a mixing bowl, combine garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir well.
  3. Pour the marinade over the chicken in the slow cooker and cover. Cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.
  4. Prepare the tzatziki by mixing Greek yogurt, garlic, grated cucumber, parsley, and salt in a separate bowl. Stir and refrigerate for at least 1 hour.
  5. Once cooked, shred the chicken directly in the slow cooker with two forks.
  6. Warm pita bread, fill with shredded chicken, top with tzatziki, and add sliced tomatoes, onions, cucumbers, and lettuce as desired.

Notes

Squeeze the cucumber to remove moisture for a thicker tzatziki. Allow tzatziki to rest for better flavor. Checking cooking time will prevent chicken from drying out.
