For the Stir-Fry
  • 1 pound peeled and deveined shrimp
  • 1 bunch fresh asparagus chopped
  • 1 cup sliced mushrooms
  • 2 cloves fresh garlic minced
  • 1 tablespoon fresh ginger grated
For the Sauce
  • 3 tablespoons soy sauce low-sodium preferred
  • 2 tablespoons olive oil or high smoke point oil like canola
  • 1 tablespoon sesame oil optional
  • to taste black pepper

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add 2 minced garlic cloves and 1 tablespoon grated ginger. Sauté for 30 seconds until fragrant.
  3. Gently add 1 pound of shrimp. Sauté for 3-5 minutes until pink and opaque.
  4. Toss in 1 bunch of chopped asparagus and 1 cup of sliced mushrooms. Stir-fry for 5-7 minutes.
  5. Drizzle in 3 tablespoons of soy sauce and 1 tablespoon of sesame oil. Stir to combine.
  6. Stir thoroughly and cook for an additional minute. Serve over rice or noodles if desired.
