  • 3 cloves Garlic minced
  • 2 cups Swiss Cheese shredded; can swap with mozzarella, cheddar, or provolone
  • 4 ounces Goat Cheese or cream cheese or feta
  • 1/2 cup Scallions chopped; replace with diced onions or chives
  • 1 teaspoon Table Salt adjust according to taste
For Serving

  • 1 cup Creamy Cauliflower Mash a low-carb complement

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking dish.
  2. In a high-sided skillet, brown the ground beef over medium-high heat for 6-8 minutes.
  3. Add sliced mushrooms and minced garlic to the skillet, cooking for another 6-8 minutes.
  4. Transfer the beef and mushroom mixture to the baking dish and fold in the goat cheese and 2/3 of the Swiss cheese.
  5. Sprinkle chopped scallions and layer the remaining Swiss cheese on top.
  6. Bake uncovered for about 15 minutes until the cheese is bubbly and golden.
  7. Let the casserole cool for about 5 minutes before slicing and serving.
