Preparation Steps
- Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking dish.
- In a high-sided skillet, brown the ground beef over medium-high heat for 6-8 minutes.
- Add sliced mushrooms and minced garlic to the skillet, cooking for another 6-8 minutes.
- Transfer the beef and mushroom mixture to the baking dish and fold in the goat cheese and 2/3 of the Swiss cheese.
- Sprinkle chopped scallions and layer the remaining Swiss cheese on top.
- Bake uncovered for about 15 minutes until the cheese is bubbly and golden.
- Let the casserole cool for about 5 minutes before slicing and serving.
