  • ½ cup Breadcrumbs panko gives a lighter texture
  • ¼ cup Milk can use plant-based milk for dairy-free
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper adjust to taste
  • 1 teaspoon Dried Oregano or Italian Seasoning any dried herb can be substituted
For the Casserole
  • 4 medium Potatoes peeled and thinly sliced; Yukon gold or russet recommended
  • 2 tablespoons Olive Oil for coating potatoes and greasing dish
  • 1 teaspoon Paprika cayenne can be used for heat
  • 1 cup Shredded Mozzarella Cheese consider low-fat or dairy-free options
  • ½ cup Shredded Cheddar Cheese gouda or pepper jack are great alternatives

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, egg, milk, salt, black pepper, and dried oregano. Mix gently until just combined; shape into small balls and set aside.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and sear for about 5-7 minutes until golden brown on all sides. They don't need to be fully cooked as they will finish in the oven.
  3. Peel and thinly slice the potatoes. Toss with olive oil, paprika, and salt and pepper to taste. Ensure they are well coated and set aside.
  4. Preheat oven to 375°F (190°C). Grease a baking dish, layer half of the seasoned potato slices at the bottom, add meatballs, then half of the mozzarella cheese. Finish with the remaining potatoes and cheese.
  5. Cover with aluminum foil and bake for 35-40 minutes until potatoes are fork-tender. Remove foil and bake for an additional 10 minutes to allow cheese to bubble and turn golden brown.
  6. Let the casserole rest for 5-10 minutes before serving. Garnish with parsley and enjoy!
