Step-by-Step Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, egg, milk, salt, black pepper, and dried oregano. Mix gently until just combined; shape into small balls and set aside.
- Heat olive oil in a skillet over medium heat. Add meatballs and sear for about 5-7 minutes until golden brown on all sides. They don't need to be fully cooked as they will finish in the oven.
- Peel and thinly slice the potatoes. Toss with olive oil, paprika, and salt and pepper to taste. Ensure they are well coated and set aside.
- Preheat oven to 375°F (190°C). Grease a baking dish, layer half of the seasoned potato slices at the bottom, add meatballs, then half of the mozzarella cheese. Finish with the remaining potatoes and cheese.
- Cover with aluminum foil and bake for 35-40 minutes until potatoes are fork-tender. Remove foil and bake for an additional 10 minutes to allow cheese to bubble and turn golden brown.
- Let the casserole rest for 5-10 minutes before serving. Garnish with parsley and enjoy!
