Preparation Steps
  1. Begin by pounding together the coriander roots, black peppercorns, and garlic in a mortar and pestle until finely crushed.
  2. In a separate bowl, combine the golden mountain sauce, white sugar, sesame oil, and oyster sauce. Stir until the sugar is dissolved.
  3. Using a food processor, combine the ground pork with the prepared sauce mixture, one egg, and cornstarch. Pulse until smooth.
  4. Transfer the blended filling to a mixing bowl, and add the crushed spice mixture, carrots, green onions, and shiitake mushrooms. Mix thoroughly.
  5. Take a dumpling wrapper, place it over a tablespoon, add filling, moisten edges with water, and seal tightly.
  6. Prepare a steamer by lining it with parchment paper, arrange dumplings, and steam over boiling water for about 10 minutes.
