  • 1 can Garbanzo Beans drained and rinsed
  • 1 can White Beans drained and rinsed
For the Protein
  • 1 cup Diced Turkey Breast can substitute with cooked chicken or omit for vegetarian
  • 1/2 cup Diced Salami or Cured Sausage optional
For the Vegetables
  • 1 cup Diced Green Bell Pepper any color bell pepper can be used
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Sliced Pepperoncini or substitute with banana peppers
  • 1/4 cup Finely Chopped Red Onion green onions can be used
  • 1 bunch Parsley chopped
For the Cheese
  • 1 cup Diced Provolone or Mozzarella or use vegan cheese substitutes
For the Dressing
  • 1 cup Plain Greek Yogurt can substitute with dairy-free yogurt
  • 3 tablespoons Extra Virgin Olive Oil high-quality recommended
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Pepperoncini Brine
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic grated
  • 1 teaspoon Dried Oregano
  • 1 pinch Red Pepper Flakes optional
  • to taste Sea Salt

Step-by-Step Instructions
  1. In a small bowl or jar, combine the Greek yogurt, olive oil, red wine vinegar, pepperoncini brine, and Dijon mustard. Add grated garlic, oregano, red pepper flakes, and sea salt. Whisk until smooth.
  2. In a large mixing bowl, add the drained garbanzo beans and white beans. Fold in the diced turkey, diced salami, and diced green bell pepper. Toss in the halved cherry tomatoes, sliced pepperoncini, chopped red onion, and parsley. Gently mix.
  3. Pour the creamy dressing over the mixed salad ingredients. Toss until all components are coated.
  4. Cover the bowl or transfer to an airtight container and chill for at least 30 minutes before serving.
