  • 2 medium Zucchini Diced; can use diced bell peppers or spinach.
  • 1 can Chickpeas Drained; substitute with cannellini or white beans.
  • 1 medium Onion Finely chopped; use yellow or white onion.
  • 3 cloves Garlic Minced; garlic powder can be used if needed.
For Cooking
  • 2 tablespoons Olive Oil Can replace with avocado oil.
  • 1 teaspoon Ground Cumin Coriander works as an alternative.
  • 1 teaspoon Smoked Paprika Regular paprika can be used as a substitute.

For Garnishing
  • 1 bunch Fresh Parsley Chopped; cilantro can be used for variation.

Method
 

Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 finely chopped onion and sauté for 3-4 minutes until translucent.
  3. Incorporate 3 minced garlic cloves and cook for an additional minute.
  4. Add 1 pound of ground turkey, breaking it apart, and cook for 5-7 minutes until browned.
  5. Stir in 2 diced zucchinis and 1 can of drained chickpeas, cooking for about 2 minutes.
  6. Sprinkle in 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, and season with salt and pepper to taste. Cook for another 5-7 minutes.
  7. Remove from heat and sprinkle with freshly chopped parsley before serving.
