  • 1 each Center-Cut Pork Loin well-marbled cut
  • 4 oz Bacon diced
For the Stuffing
  • 2 cups Fresh Spinach can be swapped with kale
  • 2 each Shallots chopped
  • 4 cloves Garlic minced
  • 2 each Apples diced; can use pears
  • 1 cup Dried Cranberries can substitute with raisins
  • 2 tbsp Maple Syrup can use honey
  • 1 tbsp Thyme fresh
  • 1 tbsp Rosemary fresh
For Gravy
  • 2 tbsp Butter
  • 2 tbsp Flour can use cornstarch for gluten-free
  • 2 cups Chicken Broth or vegetable broth
Optional Side Dish
  • 2 cups Sweet Potatoes can use butternut squash

Method
 

Step-by-Step Instructions
  1. Cook the bacon in a large skillet over medium heat for 5–7 minutes until crispy.
  2. Add chopped shallots and sauté for 2–3 minutes until softened. Stir in spinach and cook for 2 minutes until wilted.
  3. Incorporate garlic and optional brandy, cooking for 2 minutes. Mix in apples, cranberries, thyme, rosemary, and maple syrup.
  4. Butterfly the pork loin and season inside with salt and pepper. Spread filling evenly on pork.
  5. Roll the pork loin tightly around the filling and secure with kitchen twine.
  6. Sear the rolled pork roast on all sides in a skillet over medium-high heat for about 3–4 minutes per side.
  7. Transfer to a roasting pan, add garlic cloves and chicken broth, cover with foil, and roast at 425°F for 75–90 minutes until internal temperature reaches 145°F.
  8. Let the pork roast rest for 15–30 minutes before slicing and serve with gravy made from pan drippings.
