Step-by-Step Instructions for Chile Colorado
- In a slow cooker, combine beef broth, chipotle adobo sauce, diced green chiles, apple cider vinegar, tomato paste, chili powder, oregano, cumin, minced garlic, chopped yellow onion, salt, and a bay leaf. Stir well until all the ingredients are evenly blended.
- Once your sauce is well-mixed, add the beef stew meat into the slow cooker. Gently toss the beef in the sauce to ensure it is thoroughly coated.
- Cover the slow cooker with its lid and set it to cook on low for 7-8 hours.
- Once cooked, carefully remove the bay leaf and give the Chile Colorado a good stir. Spoon it directly into warm tortillas or enjoy it as a stew with refried beans and Mexican rice.

Notes
For enhanced flavor, consider searing the beef before adding it to the slow cooker. Adjust spice levels to your preference.
