Equipment

  • Mixing bowl
  • grill or non-stick skillet
  • Whisk
  • Plastic wrap

Method

Marinade Preparation
  1. In a mixing bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper. Stir thoroughly until well-blended to create a vibrant, aromatic marinade.
  2. Add the chicken into the bowl with the marinade. Ensure each piece is well-coated, then cover with plastic wrap. Refrigerate for at least 30 minutes, or overnight for deeper flavor.
Cooking
  1. Preheat a grill or non-stick skillet over medium-high heat, adding a drizzle of olive oil to prevent sticking. Cook the marinated chicken for 5-7 minutes per side until golden brown and cooked through.
  2. While the chicken cooks, prepare the garlic sauce by whisking together mayonnaise, minced garlic, additional lemon juice, and salt in a small bowl until smooth.
  3. Remove cooked chicken from heat and let it rest for a few minutes. Slice into strips and serve warm in pita bread or on a plate with fresh veggies, drizzled with garlic sauce.
