Step-by-Step Instructions for Savory Chicken Bhuna
  1. Heat 3 tablespoons of vegetable oil in a large pan over medium heat. Once hot, add 4 minced garlic cloves, 1 diced green chili, and 1 tablespoon of chopped fresh ginger. Sauté for about 1 minute until fragrant.
  2. Stir in 1 large diced onion and continue sautéing for 3-4 minutes until the onions turn golden brown and translucent.
  3. Sprinkle in ½ teaspoon turmeric powder, 1 teaspoon chili powder, 1 teaspoon ground cumin, 1 teaspoon ground coriander, and 1 teaspoon garam masala. Cook for about 1 minute, stirring constantly.
  4. Add 2 cups of chopped tomatoes and ½ cup of water to the pan. Season generously with salt to taste. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes.
  5. Introduce 1.5 pounds of diced chicken thighs into the sauce. Stir well to coat. Cook uncovered for about 20 minutes, stirring occasionally.
  6. Once the chicken is tender, squeeze in the juice of 1 lemon and sprinkle with freshly chopped coriander. Stir to combine.
