- Heat 3 tablespoons of vegetable oil in a large pan over medium heat. Once hot, add 4 minced garlic cloves, 1 diced green chili, and 1 tablespoon of chopped fresh ginger. Sauté for about 1 minute until fragrant.
- Stir in 1 large diced onion and continue sautéing for 3-4 minutes until the onions turn golden brown and translucent.
- Sprinkle in ½ teaspoon turmeric powder, 1 teaspoon chili powder, 1 teaspoon ground cumin, 1 teaspoon ground coriander, and 1 teaspoon garam masala. Cook for about 1 minute, stirring constantly.
