For the Sauce
  • 1 cup Plain Greek Yogurt Can substitute sour cream
  • 1 each Lime Zest and juice
  • 0.5 cup Cilantro Chopped
For the Salsa
  • 1 cup Pineapple Chopped
  • 0.25 cup Red Onion Diced
  • 1 each Jalapeno Chopped, remove seeds for mild

  • 8 each Tortillas Corn tortillas for gluten-free

Method
 

Preparation Steps
  1. Prepare the blackening seasoning by combining sweet paprika, cayenne pepper, black pepper, and salt in a small bowl.
  2. Make the cilantro lime sauce by mixing lime zest, lime juice, Greek yogurt, minced garlic, and chopped cilantro in another bowl.
  3. Prepare the pineapple salsa by dicing red onion, chopping pineapple and jalapeno, combining with lime juice and salt.
  4. Cook the tilapia fillets coated with blackening seasoning in a hot skillet with vegetable oil for 3-5 minutes per side.
  5. Assemble the tacos by placing broken tilapia pieces in warmed tortillas, topped with pineapple salsa and cilantro lime sauce.
