- Prepare the blackening seasoning by combining sweet paprika, cayenne pepper, black pepper, and salt in a small bowl.
- Make the cilantro lime sauce by mixing lime zest, lime juice, Greek yogurt, minced garlic, and chopped cilantro in another bowl.
- Prepare the pineapple salsa by dicing red onion, chopping pineapple and jalapeno, combining with lime juice and salt.
- Cook the tilapia fillets coated with blackening seasoning in a hot skillet with vegetable oil for 3-5 minutes per side.
- Assemble the tacos by placing broken tilapia pieces in warmed tortillas, topped with pineapple salsa and cilantro lime sauce.
