  • 4 fillets white fish tilapia, cod, or snapper
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • to taste cayenne pepper optional
For the Sauce and Toppings
  • 1 lime fresh lime juice
  • ½ cup Greek yogurt or sour cream
  • 2 cups shredded lettuce or cabbage
  • 1 cup black beans
  • 1 cup corn
  • 1 avocado sliced avocado
  • 1 cup pico de gallo
  • ¼ cup fresh cilantro
  • to taste crumbled cheese optional, feta or cotija

Method
 

Preparation Steps
  1. In a small bowl, combine smoked paprika, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir well.
  2. Pat dry the white fish fillets and rub with olive oil. Coat with the spice blend and squeeze lime juice over them.
  3. Heat a skillet over medium-high heat and cook the seasoned fish for 3-4 minutes on each side until blackened.
  4. In a mixing bowl, whisk together Greek yogurt, lime juice, garlic powder, chili powder, and salt until smooth.
  5. At the base of each bowl, add cooked rice, shredded lettuce, black beans, and corn. Top with the blackened fish.
  6. Slice avocado and arrange on the fish, then add pico de gallo and sprinkle with cilantro and crumbled cheese if desired.
  7. Drizzle the creamy sauce over each bowl and serve immediately with lime wedges.
