Marinade
  • 0.5 cup soy sauce low-sodium for a healthier twist
  • 0.25 cup brown sugar or coconut sugar for a low-GI choice
  • 0.5 cup pineapple juice fresh juice is preferred
  • 0.25 cup ketchup or a mix of tomato paste and vinegar
  • 2 tablespoons vegetable oil any neutral oil
  • 1 tablespoon minced fresh ginger use ground ginger as a substitute
  • 3 cloves garlic, minced or use garlic powder
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 0.5 teaspoon black pepper or white pepper as a substitute
Garnish
  • 0.25 cup chopped green onion for freshness
  • 2 tablespoons sesame seeds optional

Method
 

Preparation
  1. Whisk together the marinade ingredients in a medium bowl.
  2. Marinate the chicken thighs in the mixture for at least 1 hour.
  3. Preheat the grill to medium-high heat (375°F to 400°F).
  4. Remove excess marinade from chicken and discard the leftover marinade.
  5. Grill the chicken for 6-8 minutes on each side until cooked through.
  6. Baste with reserved marinade in the last minutes of grilling, if desired.
  7. Let the chicken rest for about 5 minutes before serving.
  8. Slice and garnish with green onions and sesame seeds before serving.
