- In a large bowl, combine the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Mix well and marinate for at least 30 minutes.
- Heat vegetable oil in a deep pot over medium-high heat. Add marinated chicken and sear for 5-7 minutes on each side until golden brown. Remove and set aside.
- Blend together Roma tomatoes, red bell pepper, red onion, and scotch bonnet peppers until smooth. Pour into the pot and scrape up any browned bits.
- Add tomato paste to the mixture in the pot and fry for 2 minutes. Stir constantly.
- Pour blended tomato mixture into the pot, bring to a simmer, and cook for 10 minutes. Add garlic powder, ginger powder, bouillon cube, and salt.
- Nestle seared chicken back into the pot, cover, reduce heat to low, and let simmer for 25-30 minutes.
- Check tenderness of chicken and taste for seasoning. Adjust as needed and serve.
