For the Sauce

  • 1 unit bouillon cube (Maggi or Knorr) Boosts umami flavor.
For Cooking
  • 0.25 cup vegetable oil Can swap with olive oil.

Method
 

Instructions
  1. In a large bowl, combine the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Mix well and marinate for at least 30 minutes.
  2. Heat vegetable oil in a deep pot over medium-high heat. Add marinated chicken and sear for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Blend together Roma tomatoes, red bell pepper, red onion, and scotch bonnet peppers until smooth. Pour into the pot and scrape up any browned bits.
  4. Add tomato paste to the mixture in the pot and fry for 2 minutes. Stir constantly.
  5. Pour blended tomato mixture into the pot, bring to a simmer, and cook for 10 minutes. Add garlic powder, ginger powder, bouillon cube, and salt.
  6. Nestle seared chicken back into the pot, cover, reduce heat to low, and let simmer for 25-30 minutes.
  7. Check tenderness of chicken and taste for seasoning. Adjust as needed and serve.
