  • 1 can canned diced tomatoes drained
  • 1 medium green bell pepper diced
  • 1 cup mushrooms sliced
  • 1 cup pepperoni or turkey pepperoni
  • 1 cup shredded mozzarella cheese or mixed cheeses
For Seasoning
  • 2 cloves garlic minced
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium heat and sauté minced garlic for 1 minute.
  2. Add diced green bell peppers and sliced mushrooms; sauté for 4-5 minutes until tender.
  3. Stir in cooked quinoa and drained canned diced tomatoes. Heat for 2-3 minutes.
  4. Transfer mixture to a serving bowl and spread shredded mozzarella cheese on top.
  5. Layer pepperoni on top of cheese evenly.
  6. Broil in the oven for 3-5 minutes until cheese is melted and golden.
  7. Remove and sprinkle with fresh parsley or basil before serving.
