Dough Preparation
- In a food processor, combine flour, parmesan, Italian seasoning, pepper, sugar, and salt. Pulse to mix, add butter and pulse till crumbly. Add ice water gradually till dough holds, shape into disk, chill for 1 hour.
Sauté Onions
- In a skillet, heat olive oil and add sliced onions. Cook for 10–12 minutes till soft and golden. Add garlic, sauté 1 minute, then cool.
Preheat Oven
- Preheat oven to 400°F (200°C) for even baking.
Assemble Galette
- Roll out dough to 12 inches. Transfer to parchment. Layer onions, cheddar, herbs, and tomatoes. Season with salt and pepper.
Finish and Bake
- Fold dough edges over filling for a border. Brush with cream, sprinkle with parmesan, bake 45-50 minutes or until golden.
