Ingredients
  

For the Crust
  • 1 cup All-Purpose Flour or whole wheat flour for a nuttier flavor
  • 1/4 cup Parmesan Cheese (Grated) or pecorino for a sharper taste
  • 1 tsp Italian Seasoning (Dried) or fresh herbs for more flavor
  • 1/4 tsp Freshly Ground Black Pepper red pepper flakes for spiciness
  • 1 tsp Sugar omit if using sweet tomatoes
  • 1/2 tsp Kosher Salt sea salt can be used
  • 1/2 cup Unsalted Butter (Cold and Diced) use coconut oil for dairy-free
  • 3-4 tbsp Ice Water must be very cold
For the Filling
  • 2 tbsp Olive Oil can substitute with butter
  • 1 medium Onion (Sliced) or shallots for milder taste
  • 2 cloves Garlic (Minced) or garlic powder
  • 1 cup White Cheddar Cheese (Shredded) or goat cheese for tanginess
  • 1/4 cup Additional Parmesan Cheese (Grated) skip for dairy-free
  • 2 tbsp Fresh Thyme (Minced) or dried thyme
  • 2 tbsp Fresh Parsley (Minced) basil can replace
  • 2 tbsp Fresh Chives (Minced) or scallions
  • 4 large Tomatoes (Thinly Sliced) ripe heirloom or beefsteak recommended
  • to taste Kosher Salt and Pepper for seasoning
For Finishing
  • 2 tbsp Heavy Cream or milk for lighter finish

Method
 

Dough Preparation
  1. In a food processor, combine flour, parmesan, Italian seasoning, pepper, sugar, and salt. Pulse to mix, add butter and pulse till crumbly. Add ice water gradually till dough holds, shape into disk, chill for 1 hour.
Sauté Onions
  1. In a skillet, heat olive oil and add sliced onions. Cook for 10–12 minutes till soft and golden. Add garlic, sauté 1 minute, then cool.
Preheat Oven
  1. Preheat oven to 400°F (200°C) for even baking.
Assemble Galette
  1. Roll out dough to 12 inches. Transfer to parchment. Layer onions, cheddar, herbs, and tomatoes. Season with salt and pepper.
Finish and Bake
  1. Fold dough edges over filling for a border. Brush with cream, sprinkle with parmesan, bake 45-50 minutes or until golden.
