Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar for 2-3 minutes until light and fluffy. Then, add the egg, lemon extract, and pink food coloring, mixing until combined. Gradually add flour and baking soda, stirring until no streaks remain.
  3. Using a cookie scoop, portion out the cookie dough onto prepared baking sheets, leaving enough space between each scoop. Slightly flatten each dough ball with your fingers.
  4. Bake the cookies for 9-12 minutes until the edges are set and the centers are slightly soft. Allow them to cool on baking sheets for a few minutes before transferring to a wire rack.
  5. To make the frosting, beat together softened butter, powdered sugar, lemon juice, and heavy cream until smooth. Optionally, add pink food coloring.
