  1. In a medium bowl, mix chili powder, cumin, paprika, lime juice, and a pinch of salt to create a marinade. Add the chicken thighs and marinate for at least 15 minutes.
  2. Heat a tablespoon of oil in a skillet over medium heat. Cook the marinated chicken thighs for 7–10 minutes on each side until golden brown. Ensure an internal temperature of 165°F.
  3. Combine cubed pineapple, diced red onion, chopped cilantro, and a squeeze of lime juice in a separate bowl to prepare the salsa.
  4. Warm tortillas in the skillet for about 30 seconds each side. Slice the rested chicken and layer on the tortillas with pineapple salsa and toppings.
