- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup low sodium soy sauce, 2 tablespoons brown sugar (or honey), 1 tablespoon Dijon mustard, 3 cloves minced garlic, and a dash of black pepper until well blended.
- Place 2 bone-in pork chops in a large zip-top bag or baking dish. Pour the marinade over the pork chops.
- Refrigerate the marinated pork chops for at least 1 hour, preferably 8 hours or overnight.
- Preheat your grill to 400°F (medium-high heat).
- Remove the pork chops from the marinade and discard excess marinade.
- Grill the pork chops for about 2 minutes on high heat, then reduce temperature and cook for an additional 4-7 minutes per side.
