Method

Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare an 8-inch round cake pan by greasing it with vegan butter and lining the bottom with parchment paper.
  2. Pour 2 tablespoons of melted vegan butter into the prepared cake pan, swirl to coat, then sprinkle ¼ cup of granulated sugar evenly and arrange sliced peaches on top.
  3. Whisk together 1¾ cups of all-purpose flour, 2¼ teaspoons of baking powder, and ⅛ teaspoon of ground nutmeg in a medium mixing bowl. Add ¾ cup of dairy-free milk, ¼ cup of neutral oil, and ¾ cup of granulated sugar and mix until just combined.
  4. Pour the batter over the arranged peach slices in the cake pan and bake for 47-52 minutes until golden brown and a toothpick comes out mostly clean.
  5. Cool the cake in the pan for about 10-15 minutes, then invert onto a serving plate to reveal the caramelized peaches on top.
