  1. Wash and pit 6-8 ripe peaches, then dice them into small pieces. Combine with ½ cup of granulated sugar, ½ cup of water, and 1 tablespoon of fresh lemon juice in a medium saucepan. Simmer over medium-low heat for about 10-15 minutes until the peaches are soft.
  2. Remove from heat and mash the peach mixture. Strain through a fine-mesh sieve into a bowl to extract a smooth peach puree. Allow to cool to room temperature.
  3. In a small saucepan, combine 1 cup of granulated sugar with 1 cup of water. Stir over medium heat until the sugar fully dissolves. Let cool completely.
