- Preheat your oven to 180°C (350°F) and line a 9x9-inch baking pan with parchment paper.
- In a mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt.
- Melt the butter and let it cool slightly before adding it to the dry mixture with the egg and vanilla extract.
- Press about two-thirds of the crumbly dough into the bottom of the prepared pan.
- Combine diced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon in a separate bowl.
- Spread the peach filling evenly over the crust layer in the pan.
- Crumble the remaining dough over the peach filling, leaving gaps for the filling to show through.
- Bake for 35–40 minutes until the top is golden brown and the filling is bubbling.
- Cool completely in the pan before lifting out and slicing into bars.
