- Preheat your oven to 180°C (350°F) and line a 9x9-inch baking pan with parchment paper.
- In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt. Whisk until well blended.
- Pour in melted butter, egg, and vanilla extract. Stir until a crumbly dough forms.
- Press about two-thirds of the dough into the bottom of the prepared baking pan.
- In another bowl, toss sliced peaches with sugar, cornstarch, lemon juice, and cinnamon.
- Spread the peach mixture evenly over the packed crust.
- Crumble the remaining dough over the peach layer.
- Bake for 35–40 minutes until the topping is golden brown and the filling is bubbly.
