Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix milk, melted butter, eggs, and vanilla until smooth.
  4. Gently combine the wet ingredients with the dry, being careful not to over-mix.
  5. Fold in the diced peaches without mashing them.
  6. Fill each muffin cup two-thirds full with batter.
  7. Combine brown sugar and cinnamon for the topping and sprinkle it on the muffins.
  8. Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
